Meriwether Godsey is looking for a Full-time Chef/Manager responsible for overseeing the kitchen by assisting with the back-of-house operations at the Virginia Center for the Arts, located in Amherst, VA.
What you will do:
Assist cooks and other production team members in the quality and timeliness of food production, using batch-cooking methods to maintain the quality and freshness of the product.
Drive all aspects of production and work collaboratively alongside production staff to incorporate key ingredients/products into recipe and menu offerings for breakfast, lunch, and dinner.
Prioritize sustainably and locally produced foods, and work with production staff to regularly incorporate these products into recipe and menu offerings.
Ensure timely production of all menu items, checking quality and proper presentation.
Ensure proper food temperatures are reached, maintained, and recorded. Ensure daily records of food usage and other compliance regulations are kept.
Support the revision, testing, and development of recipes and communicate any changes/updates to production staff. Ensure adherence to company recipe and presentation standards.
Ensure consistency, organization, and proper rotation in all food storage areas.
Work with the Director to develop and customize menu cycles, incorporating specials/enhancements to add program excitement and extra value.
Perform all duties in accordance with food safety and sanitation best practices
What you need:
Culinary Degree and/or 3+ years in a Kitchen Supervisory role required
Knowledge of health & safety standards
ANSI Food Protection Manager and Allergen Certified preferred
Arithmetic, the ability to measure products and convert units of measure
Exceptional cooking skills; experience with food service operations
Proficient in the use of commercial kitchen equipment, including routine maintenance and cleaning
Ability to learn, follow instructions, and record information according to policies and systems
